Once again, the story seems to alternate between a very precise schedule (for the travel) to something very vague. Harker seems to arrive and it then seems very unclear when the actual work he has been sent to do will commence. Surely an important London law firm would not send a billable lawyer out for such a long time without a clearer schedule?

I disagree. This is the 19th century, and legal customs were different, if only because of the relative slowness of communication.

And note that Harker has just arrived. He wouldn't expect to start work in the middle of the night.
