“When I read to Mina, Van Helsing's message in the phonograph, the poor girl brightened up considerably.”

While Jonathan was tending to Mina, after she fainted, Van Helsing recorded a message for him. That would have been quicker than writing a lengthy note, more confidential (after it was recorded), and would give Van Helsing a chance to try this new device for himself. When Jonathan listened to it (I suppose he got a short note telling him to do that), he made a shorthand transcript, which he later read to Mina.
